Easy Turkey Marinade

I love to marinate my turkey the day before so it has all day and night to soak in the seasonings. Here is my recipe. Enjoy!

Turkey Marinade
2 sticks of unsalted butter
1/3 cup of extra virgin olive oil
4 garlic cloves
2 tsp of oregano
2 tsp of black pepper
2 tsp of sage
2 tsp of rosemary
2 tsp parsley
2 tsp ground mustard (powder)
2 tbsp of adobo goya

Mix all ingredients in a blender or food processor and then put on turkey all over even inside skin and cavity. Cover and refrigerate! Enjoy!!!

Wonderful Noodle pudding


Every year my family has made noodle pudding for Thanksgiving without fail. My mom learned this great recipe from a family friend who is more like her mom and she taught it to me. Hope you guys enjoy!!!



Noodle Pudding
16 oz pkg of egg noodles
1/2 cup of butter softened
8 oz pkg of cream cheese softened
5 eggs beaten
1 cup of sugar
2 tsp of cinammon
2 tsp of vanilla
2 cups of apricot nectar
2 cups of milk
1 cup of golden raisins

Topping
3 cups of corn flake crumbs
1 cup of butter softened
2 tsp of vanilla
2 tsp of cinammon

Preheat oven to 350 degrees. Grease a 9x13 baking pan (i prefer glass). In a pot of salted boiling water add noodles and cook for 8-10 minutes or until done al dente. Drain. In a medium bowl mix cream cheese, butter, eggs, sugar, cinammon and vanilla. Stir in noodles. Then add apricot nectar and milk. Stir well then pour in baking dish. In a medium bowl mix together corn flake crumbs, butter, vanilla, sugar, and cinammon. Pour ontop of noodle mixture. Bake for 45 minutes or until golde brown and bubbly. ENJOY!!!!!

Quiche


This week has been crazy with trying to paint my kitchen and cleaning but it did not get in the way of finding new recipes to add to my recipe book! Quiche I have found is one of the most delicious things to make and also one of the easiest and most versatile. You can add many things to make it different all the time. Here is the one I came up with! Enjoy!




Quiche

5 eggs

2 tsp of dried parsley

2 tsp of dried thyme

1 tsp of dried basil

1 cup of shredded cheese ( any but i liked mexican blend)

1 cup of mesquite turkey breast sliced and chopped

2tbsp of milk

2tbsp of flour

2 tbsp of real bacon pieces

salt and pepper to tast

1 store bought pie crust


Preheat oven to 350 degrees. Mix all ingredients together in a bowl and then pour in pie crust. Bake for 45 min and Enjoy!!!!

Banana and Chocolate Chip pancakes


One of my favorite things to make for breakfast is pancakes from scratch. The best thing is finding different things to add into the mixture to make them yummier. You can't go wrong with bananas and chocolate chips.




Banana and Choco Chip Pancakes
2 cups of all purpose flour
2 tbsp of baking powder
2 eggs
13/4 cups of milk
1 tbsp of vanilla
1/2 cup of vegetable oil
1/3 cup of milk chocolate chips or semi sweet
2 ripe bananas mashed
softened butter or margerine (for cooking pancakes)


Mix dry ingredients in one bowl. In a seperate bowl mix all wet ingredients. Make a whole in the middle of the dry ingredients and add the wet ingredients. Mix well. Then add choco chips and mashed bananas. Mix well. Add some butter on a griddle or pan and then add 1/4 cup of mixture. Wait til it starts to bubble and then turn with spatula. Repeat until mixture is finished. ENJOY!!!

Marry a woman who makes a good Meatloaf!


My brother n law was talking to my husband one day while they were discussing our engagement. He asked my hubby "well can she cook?" and he answered "Well I dont know how much she knows how to cook but I know she makes a really good meatloaf!" My brother n law then said "Marry her! You want to marry a woman that can make a great meatloaf!" LOL!!!! My meatloaf has become one of my hubbys favorite meals and one that has converted those who say they dont like meatloaf to all of a sudden loving it. And so I want to share it with you guys!


Meatloaf

3 lbs of ground beef (if you are using lean add a tbsp of olive oil)
1/2 cup of Italian style bread crumbs
1/3 cup evaporated milk
3 eggs (room temp)
3 tsp of oregano
3 packets of chicken boullion (powder) or 4tbsp if in a jar
2 tbsp of garlic salt
2 tbsp black pepper
1 15 oz can of tomato sauce divided
2 cups of ketchup divided
2 cups of dorothy lynch homestyle dressing

Preheat your oven to 375 degrees. Combine beef, bread crumbs, milk, eggs, oregano, chicken boullion,garlic salt and pepper. Mix well. Then add 1/4 cup of tomato sauce, 1/2 cup of ketchup and 1/2 cup of dressing into meat. Mix well. Shape into a loaf and put into a rectangular baker or loaf pan. (I prefer rectangular baker just because it gives me more room to pour my sauce)

In a seperate bowl mix the rest of tomato sauce, ketchup and dressing. Pour ontop of meatloaf and cover with aluminum foil and put in oven. Bake for an 1 hour then uncover and bake for another 30 minutes or until done. Add some mashed potatoes and corn and it is delish! ENJOY!

Secrets to creamy and delicious mashed potatoes


Every year for Thanksgiving since I can remember my favorite thing to make was the mashed potatoes and to this day it still is. I have finally found the perfect mashed potato recipe that everyone I know has come to love. I actually came up with this recipe one day when I realized I didn't have enough potatoes and had to improvise. So I took my original recipe and added a couple of other touches. Hope you guys ENJOY!



Creamy Mashed Potatoes
12-16 Idaho potatoes peeled and cut
3tsp of salt
3 tbsp of adobo Goya
2 tsp of parsley
2 sticks of unsalted butter softened(or a little more if you think its too thick)
1 packet of Betty Crocker Herb and butter instant mashed potatoes (already made following box directions. sounds weird but it will make them delicious!)

Boil your water and add salt and adobo. Cook potatoes til soft. Whip potatoes with handheld mixer and then add butter, parsley and betty crocker potatoes. Whip again and then serve. Enjoy!

Easy Rice and beans














One of my favorite dishes to make that goes great with every steak, pork and chicken dish is rice and beans. So my mom gave me a great tip on how to make an easy bean dish to put on top of rice. For this delicious dish you will need:

2 cans of Progresso Lentil soup
4 strips of bacon chopped
1 clove of garlic minced
2 tsp of Goya sofrito

In a medium size saucepan fry the bacon strips on medium heat. When almost done add the garlic. Cook for about 2-3 minutes but dont burn the garlic. Add the lentils and sofrito. Cook for about 5 minutes and then let rest. Pour ontop of rice and Enjoy! They are quick, easy and DELICIOUS!!!

Chicken Yum Yums

This is one of those meals that I love to make when the whole family is coming over for dinner. It is simple yet delicious and a meal I know everyone no matter the age or how picky they are will enjoy!!!



Chicken Yum Yums!!!

4 chicken breasts cooked and shredded
2 tsp of seasoned salt
2 tsp garlic powder
1 8oz pkg of cream cheese (softened)
1 10.5 oz of condensed cream of chicken
2 pkgs of crescent roll dough
1 box of chicken stuffing mix
5 tbsp of butter melted

Preheat oven to 375 degrees. In a bowl mix chicken, spices, cream cheese and cream of chicken. Seperate crescent dough into triangles. Pour 1 tbsp of chicken mixture in the middle of crescent triangle and then wrap by folding ends ontop of each other. Dip in melted butter and then in stuffing mix. Place chicken yum yums on baking sheet and bake for 18-20 minutes or until dough is cooked and golden brown. Serve with mashed potatoes, corn, and a green salad. Enjoy!!
