Easy Turkey Marinade

I love to marinate my turkey the day before so it has all day and night to soak in the seasonings. Here is my recipe. Enjoy!

Turkey Marinade
2 sticks of unsalted butter
1/3 cup of extra virgin olive oil
4 garlic cloves
2 tsp of oregano
2 tsp of black pepper
2 tsp of sage
2 tsp of rosemary
2 tsp parsley
2 tsp ground mustard (powder)
2 tbsp of adobo goya

Mix all ingredients in a blender or food processor and then put on turkey all over even inside skin and cavity. Cover and refrigerate! Enjoy!!!

Wonderful Noodle pudding


Every year my family has made noodle pudding for Thanksgiving without fail. My mom learned this great recipe from a family friend who is more like her mom and she taught it to me. Hope you guys enjoy!!!



Noodle Pudding
16 oz pkg of egg noodles
1/2 cup of butter softened
8 oz pkg of cream cheese softened
5 eggs beaten
1 cup of sugar
2 tsp of cinammon
2 tsp of vanilla
2 cups of apricot nectar
2 cups of milk
1 cup of golden raisins

Topping
3 cups of corn flake crumbs
1 cup of butter softened
2 tsp of vanilla
2 tsp of cinammon

Preheat oven to 350 degrees. Grease a 9x13 baking pan (i prefer glass). In a pot of salted boiling water add noodles and cook for 8-10 minutes or until done al dente. Drain. In a medium bowl mix cream cheese, butter, eggs, sugar, cinammon and vanilla. Stir in noodles. Then add apricot nectar and milk. Stir well then pour in baking dish. In a medium bowl mix together corn flake crumbs, butter, vanilla, sugar, and cinammon. Pour ontop of noodle mixture. Bake for 45 minutes or until golde brown and bubbly. ENJOY!!!!!

Quiche


This week has been crazy with trying to paint my kitchen and cleaning but it did not get in the way of finding new recipes to add to my recipe book! Quiche I have found is one of the most delicious things to make and also one of the easiest and most versatile. You can add many things to make it different all the time. Here is the one I came up with! Enjoy!




Quiche

5 eggs

2 tsp of dried parsley

2 tsp of dried thyme

1 tsp of dried basil

1 cup of shredded cheese ( any but i liked mexican blend)

1 cup of mesquite turkey breast sliced and chopped

2tbsp of milk

2tbsp of flour

2 tbsp of real bacon pieces

salt and pepper to tast

1 store bought pie crust


Preheat oven to 350 degrees. Mix all ingredients together in a bowl and then pour in pie crust. Bake for 45 min and Enjoy!!!!

Banana and Chocolate Chip pancakes


One of my favorite things to make for breakfast is pancakes from scratch. The best thing is finding different things to add into the mixture to make them yummier. You can't go wrong with bananas and chocolate chips.




Banana and Choco Chip Pancakes
2 cups of all purpose flour
2 tbsp of baking powder
2 eggs
13/4 cups of milk
1 tbsp of vanilla
1/2 cup of vegetable oil
1/3 cup of milk chocolate chips or semi sweet
2 ripe bananas mashed
softened butter or margerine (for cooking pancakes)


Mix dry ingredients in one bowl. In a seperate bowl mix all wet ingredients. Make a whole in the middle of the dry ingredients and add the wet ingredients. Mix well. Then add choco chips and mashed bananas. Mix well. Add some butter on a griddle or pan and then add 1/4 cup of mixture. Wait til it starts to bubble and then turn with spatula. Repeat until mixture is finished. ENJOY!!!

Marry a woman who makes a good Meatloaf!


My brother n law was talking to my husband one day while they were discussing our engagement. He asked my hubby "well can she cook?" and he answered "Well I dont know how much she knows how to cook but I know she makes a really good meatloaf!" My brother n law then said "Marry her! You want to marry a woman that can make a great meatloaf!" LOL!!!! My meatloaf has become one of my hubbys favorite meals and one that has converted those who say they dont like meatloaf to all of a sudden loving it. And so I want to share it with you guys!


Meatloaf

3 lbs of ground beef (if you are using lean add a tbsp of olive oil)
1/2 cup of Italian style bread crumbs
1/3 cup evaporated milk
3 eggs (room temp)
3 tsp of oregano
3 packets of chicken boullion (powder) or 4tbsp if in a jar
2 tbsp of garlic salt
2 tbsp black pepper
1 15 oz can of tomato sauce divided
2 cups of ketchup divided
2 cups of dorothy lynch homestyle dressing

Preheat your oven to 375 degrees. Combine beef, bread crumbs, milk, eggs, oregano, chicken boullion,garlic salt and pepper. Mix well. Then add 1/4 cup of tomato sauce, 1/2 cup of ketchup and 1/2 cup of dressing into meat. Mix well. Shape into a loaf and put into a rectangular baker or loaf pan. (I prefer rectangular baker just because it gives me more room to pour my sauce)

In a seperate bowl mix the rest of tomato sauce, ketchup and dressing. Pour ontop of meatloaf and cover with aluminum foil and put in oven. Bake for an 1 hour then uncover and bake for another 30 minutes or until done. Add some mashed potatoes and corn and it is delish! ENJOY!

Secrets to creamy and delicious mashed potatoes


Every year for Thanksgiving since I can remember my favorite thing to make was the mashed potatoes and to this day it still is. I have finally found the perfect mashed potato recipe that everyone I know has come to love. I actually came up with this recipe one day when I realized I didn't have enough potatoes and had to improvise. So I took my original recipe and added a couple of other touches. Hope you guys ENJOY!



Creamy Mashed Potatoes
12-16 Idaho potatoes peeled and cut
3tsp of salt
3 tbsp of adobo Goya
2 tsp of parsley
2 sticks of unsalted butter softened(or a little more if you think its too thick)
1 packet of Betty Crocker Herb and butter instant mashed potatoes (already made following box directions. sounds weird but it will make them delicious!)

Boil your water and add salt and adobo. Cook potatoes til soft. Whip potatoes with handheld mixer and then add butter, parsley and betty crocker potatoes. Whip again and then serve. Enjoy!

Easy Rice and beans














One of my favorite dishes to make that goes great with every steak, pork and chicken dish is rice and beans. So my mom gave me a great tip on how to make an easy bean dish to put on top of rice. For this delicious dish you will need:

2 cans of Progresso Lentil soup
4 strips of bacon chopped
1 clove of garlic minced
2 tsp of Goya sofrito

In a medium size saucepan fry the bacon strips on medium heat. When almost done add the garlic. Cook for about 2-3 minutes but dont burn the garlic. Add the lentils and sofrito. Cook for about 5 minutes and then let rest. Pour ontop of rice and Enjoy! They are quick, easy and DELICIOUS!!!

Chicken Yum Yums

This is one of those meals that I love to make when the whole family is coming over for dinner. It is simple yet delicious and a meal I know everyone no matter the age or how picky they are will enjoy!!!



Chicken Yum Yums!!!

4 chicken breasts cooked and shredded
2 tsp of seasoned salt
2 tsp garlic powder
1 8oz pkg of cream cheese (softened)
1 10.5 oz of condensed cream of chicken
2 pkgs of crescent roll dough
1 box of chicken stuffing mix
5 tbsp of butter melted

Preheat oven to 375 degrees. In a bowl mix chicken, spices, cream cheese and cream of chicken. Seperate crescent dough into triangles. Pour 1 tbsp of chicken mixture in the middle of crescent triangle and then wrap by folding ends ontop of each other. Dip in melted butter and then in stuffing mix. Place chicken yum yums on baking sheet and bake for 18-20 minutes or until dough is cooked and golden brown. Serve with mashed potatoes, corn, and a green salad. Enjoy!!

Chinese without the takeout




How about Chinese without having to do takeout? One of my favorite meals to make that my family and friends love is Sweet and Sour chicken with Pork fried rice and Egg rolls. So I thought I would share it with all of you! Enjoy!

Pork Fried rice
1 cup of diced cooked pork
1 pkg of frozen peas and carrots
2 cups of cooked white rice
1 can of sliced water chestnuts
3 tbsp of black bean garlic sauce
1 tbs soy sauce
3 scrambled eggs
2 tbsp of vegetable oil
In a pot heat oil and cook veggies, water chestnuts, black bean sauce and soy sauce together for 2 min. Add pork and cook for another 5. Add scrambled eggs and rice. Mix well and then heat for another 5 min. Then serve. Enjoy!
Sweet and Sour Chicken
4-6 chicken breasts cubed
1 ¼ cup of flour
1¾ cup milk
1 egg
1 tbsp of baking powder
3 tbsp of seasoned salt
2 tbsp of black pepper
3 tbsp of garlic salt

Sweet and Sour Sauce
2 jars of sweet and saur sauce (any kind)
1 cup of brown sugar
1 cup of sugar

In a mixing bowl mix flour, baking powder, black pepper, garlic salt and seasoned salt. In another bowl mix milk and egg. Add liquid mixture to dry mixture and then add the chicken. In a pot heat 2-3 cups of vegetable oil on high and once its ready lower the heat to low or use your deep fryer at 350 degrees. Put 8-10 pieces of chicken at a time and fry for about 5-8 minutes or until chicken is done and then take out and put on a paper towel to drain.

For sauce put all ingredients in a sauce pan and bring to a boil. Take off of heat and serve. Enjoy this sauce by dipping your chicken or putting all of your chicken and mixing with the sauce. Enjoy!

Egg rolls
1 package of egg roll wrappers
1 package of coleslaw mix
1 2lb pork tenderloin cubed
1 jar of barbeque sauce (I use honey barbeque)
2 tbsp of seasoned salt
1 tbsp of garlic salt
2 tbsp paprika
4 tbsp of olive oil divided
Vegetable oil to fry

In a bowl mix all seasonings. Rub 2 tbsp of oil all over tenderloin pieces and then the seasoning mix. Heat the other 2 tbsp of oil in a frying pan and once hot add tenderloin pieces. Cook for about 8-10 minutes or until pork is white and done. Take cooked pork and put in food chopper or blender and chop until fine. In a bowl add coleslaw mix and pork. Then add bbq sauce. Mix well and then put 1 ½ tbsp of mixture in an egg roll wrap and fold. Fry in a pan with vegetable oil or in deep fryer until it is golden brown. Serve and Enjoy!

Easy marinade for Chicken or Beef





If youre looking for a great tasting and easy marinade for your steak or chicken here's a great tip. All you need is 1 bottle of Italian dressing, 3 garlic cloves minced, and 2 tablespoons of Worcestershire sauce. Mix ingredients together and put in a ziploc bag with your meat or chicken. Let rest in fridge for 2hours to overnight and then grill or bake! It is delicious and easy to make. Enjoy!!

How about Lasagna with a twist!

What’s for dinner?” How about Lasagna? Everyone, especially kids love lasagna, but how about making it different and fun. Instead of making one big lasagna you can make individual lasagna rolls. You will need 10-12 Lasagna noodles cooked and drained, 4 chicken breasts cooked and shredded, alfredo sauce homemade or from a jar, 2 cups of shredded mozzarella cheese, 1 8 oz container of ricotta cheese, half a cup of chopped basil, veggies like cooked spinach and chopped mushrooms (can be optional), and salt and pepper to taste. Mix a half cup of alfredo sauce with shredded chicken, basil, 1 cup of mozzarella, ricotta, salt and pepper and veggies. Take 1 tbsp (or a little more) of mixture and spread on a lasagna noodle and then roll. Continue until all noodles are filled with mixture. Spray a lasagna pan with cooking spray and place rolls. Top with the rest of Alfredo sauce and mozzarella cheese and bake at 350 degrees for 45 minutes. Add some garlic bread and you will have a delicious meal that is different from your regular lasagna and fun to make!!! Enjoy!



If you need a simple, fast and yummy homemade recipe for alfredo sauce here it is: A 16oz container of heavy whipping cream, 8oz cream cheese softened, 2 sticks of butter softened, 1 tsp of garlic powder and 1 cup of parmesan cheese (add more as you like). In a saucepan on low heat melt butter and cream cheese. Add heavy whipping cream and garlic powder. Mix with a whisk until cream cheese and butter are mixed in well. Add parmesan cheese and let simmer for 10 minutes on low heat. Enjoy!

Lets go Tacos!!!


One of my favorite things to do is Cook! I love to make things that make my family go "HMMM THIS IS YUMMY! One of my family's favorite dishes is Shredded beef tacos. Its easy to make and delicious. Enjoy!
2-3 lb rump roast
3 tbsp of cumin
3 tbsp of California chili powder
1-2 tbs of seasoned salt
2 cans of chicken broth
3 cloves of garlic chopped
2 tsp of black pepper
Put all ingredients in a crock pot on low for 6-8 hours or until the meat is falling apart! Shred and then add a little bit of the juice that you cooked it with so it doesn't dry out. Put it in a flour tortilla with shredded lettuce, Mexican blended cheese, tomatoes, and some slices of avocado and you have some yummy tacos!!

Just the beginning

As a housewife one of the concerns I have everyday is what are we going to have for dinner. I love to cook and its also my stress reliever believe it or not. I decided to start a blog on easy and yummy dinners. I want to share with everyone recipes that I've come up with, recipes I've changed and made my own, and also recipes that have been shared with me that I enjoy making. Hope this can help every mom out there that worries every day about something yummy and easy to make to put on the table!!! Enjoy!!

Before I start here is a little about my life and family who are my biggest and most wonderful food critics!
Dutch is my wonderful husband of 7 years. He is my best friend and my biggest food critic. He blames his weight gain on my cooking hehehe! He is my picky eater and because of that I have to modify a lot of my recipes to his liking. He completes me and has made me the happiest woman in the world. I am lucky to have him in my life. I am grateful for his hard work and for being such a great husband and great father.

Stephan Luis Howe is my oldest who is 5 years old. He is my adventurous one who is not scared of anything! Whether its climbing a tree all the way to the top, hopping our fence because he doesnt want to play in the backyard anymore and doesnt want to go in the house to go out the front door or trying to find snakes and grasshoppers in the backyard this boy is always doing something! I love him for his fearlessness although it makes me scared that he isnt scared of anything. He is also my sportsy kid. He loves soccer, baseball and football and is really good at all of them. His newest adventure is swimming. Just yesterday we took them swimming to the reservoir and as we were in the water playing he looked at me and said "hey mom look at me I can swim under water now" as I turned around to look at him there he was swimming underwater towards me. With Stevie I cant take much credit for teaching him how to do much of what he knows. He has always been independent and somehow figured things out on his own. At the age of two he watched all the kids in the neighborhood riding their scooters and so he wanted to try and did it. At the age of three he learned how to ride a bike with no training wheels and then learned how to ride a skateboard. Im amazed and couldnt be more prouder of him!!!



Samuel David Howe is my youngest who just turned 3! He is my mommas boy. Always wants to come with me everywhere even if its just to get the mail! He is also my tree climbing, bike riding trying to ride a skateboard now boy! I think he is trying to follow in his brother's footsteps. He loves to go on adventures but on his own without telling anyone which always can make me kinda crazy! A couple of weeks ago the kids were playing outside and when I looked to check up on them Sami wasnt there. I sent Dutch (my hubby) to look for him and sure enough as he went outside to look there came our neighbor with Sami who had decided he wanted to ride his bike farther away from the house. Thank goodness we live in a cul de sac with great neighbors or else I would be in serious trouble with this one. He is also my SUPER BUNNY!! ready to save the day and help mom out whether its vacuuming, cleaning and even cooking he always wants to help! I also couldnt be prouder of him! He is my cuddly, loving boy who always has a kiss and hug for mom!
